Berry Coffee Cake- A Healthy Version

I have been on a breakfast kick lately: muffins, breads, coffee cake, shakes, you name it and I've made it sometime in the last month. No boring bowl of cereal for me! This recipe is an easy one to make, absolutely delicious, and healthy to boot. Enjoy!

Berry Coffee Cake

1/3 cup packed brown sugar
1/2 cup buttermilk (don't have buttermilk on hand? check out the tip below)
2 tablespoons vegetable oil
1 teaspoon vanilla
1 egg
1 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
1 cup fresh or frozen berries (blueberries, raspberries, blackberries, or a mix)- do not thaw
1/4 granola

Preheat oven to 350 degrees. Grease a 9inch cake/pie pan with cooking spray.

In a bowl mix the brown sugar, buttermilk, oil, vanilla, and egg until smooth. Add in flour, baking soda, cinnamon, and salt and stir just until moist. Fold in half of the berries. Pour into pan and sprinkle with the remaining berries and granola.

Bake for 25-30 minutes until golden brown on top and a toothpick inserted in the center comes out clean. Cool for 10 minutes and serve. Best served warm, but a treat cold too.

** No buttermilk? No problem. Make your own buttermilk by mixing together 1/2 cup whole milk or 2% and 1 1/2 teaspoons white vinegar or lemon juice. Now go forth and conquer breakfast!
