Limoncello

Ever since Danny DeVito made his infamous appearance on The View I have wanted to try Limoncello. Check out a clip of that episode here. I can only hope this Limoncello provides as much entertainment as Danny DeVito did. Once this was made, I struggled with how to consume it and on ice just seemed so boring. I liked it mixed with Club Soda, but it's delicious on ice too. Eric suggested adding it to ice tea. Eric's girlfriend, Caitlin, thought it would be great mixed with Club Soda and with a few red raspberries or a dash of raspberry liqueur. I would love to hear your serving ideas. Enjoy!

Limoncello
10 lemons
1- 750ml bottle of vodka
2 cups water
1 cup sugar

Peel the lemons using a vegetable peeler and try to avoid the pith- the white parts. Place the lemon peels in a 2-quart jar with a tight fitting lid (covering the plastic wrap is ok too), pour the vodka over the peels. Cover and store for a week.

After a week, make a simple syrup by combining the sugar and water in a saucepan over medium heat until the sugar dissolves. Cool completely. Strain the lemon peels from the vodka. Add the simple syrup to the vodka. Add a half cup or so at a time until you reach the desired sweetness. Store in air-tight containers and keep refrigerated. Enjoy!
