Tangy and Sweet Balsamic Dressing

Happy Mother's Day! For Ryan and I, this is Mother's Weekend. We celebrated with my Mom on Saturday and will celebrate with his Mama today and wouldn't you have guessed it: both Moms are doing the cooking! We wanted to bring something for the celebration. In our produce box this week from Timber Creek Organics we had the FIRST WATERMELON OF THE SEASON! YEA! So, we thought to share it with our Mothers in a new way: drizzled with a balsamic syrup. So far Ryan, my Mom, and Cindy love it, Dad hates it (what else is new?!), and Brian and Alan "can live without it." I'll update this post with the reactions from today! Enjoy!
P.S. I read that this tangy and slightly sweet syrup tastes great on brussels sprouts too.


Tangy and Sweet Balsamic Dressing
1 1/2 cups balsamic vinegar
1/4 cup sugar
Watermelon cubes
Stir the balsamic vinegar in a saucepan over medium-low heat until the sauce is reduced by about half- so you will have about 3/4 cup sauce left. It will be thicker and will continue to thicken as it cools. Drizzle over watermelon. Keep leftovers in an airtight container in the fridge.
